This is the one step most people skip — and it is everything. The starchy water left over from cooking the pasta is what turns the garlic oil into a glossy, emulsified sauce that coats every strand. Add it a splash at a time while tossing the pasta vigorously over medium heat. Do not rush it.
The Garlic Rule
Slice the garlic thin and cook it low and slow in the olive oil. You are looking for a pale golden colour — never dark brown. The moment garlic turns dark it becomes bitter, and there is no saving the dish. Patient, gentle heat is the secret.
