There is a reason the French omelette is considered a test of a chef's skill in culinary school — not because it is complicated, but because it demands attention, speed and the right technique. The Stir and Shake Method

The moment the eggs hit the pan, stir them rapidly with a fork in small circles while simultaneously shaking the pan back and forth.
