The Best Bread for French Toast

Brioche is the gold standard. Its buttery richness creates an incredibly custardy centre that no regular sliced bread can match. Day-old brioche is even better than fresh — it absorbs the egg custard without falling apart. Challah and thick sourdough are excellent alternatives if brioche is not available.


The Secret to a Perfect Custard

The key ratio is 1 egg to roughly 3 tablespoons of milk or cream per slice. Too much milk and the custard is watery; too little and the inside stays eggy. Adding cinnamon, vanilla and a pinch of sugar to the custard transforms the flavour completely.
