Blend the Tahini First
This is the single most important step most hummus recipes skip. Before adding anything else, blend the tahini with the lemon juice and garlic alone for a full minute. The tahini turns pale, almost white, and becomes aerated and light. This step is what creates that ultra-smooth, creamy texture that store-bought hummus can never replicate.
The Ice Cold Water Secret
Once the chickpeas are in, drizzle ice cold water into the running food processor one tablespoon at a time. The cold temperature and the gradual addition both contribute to a lighter, smoother, almost whipped consistency. This step alone transforms good hummus into extraordinary hummus.
