There is something quietly brilliant about Pasta al Limone. Five ingredients, fifteen minutes, and the result is one of the most elegant pasta dishes in the Italian repertoire. Butter, lemon zest, lemon juice, Parmesan and pasta water — nothing else needed, nothing else wanted.


The Secret is the Pasta Water

Just like Aglio e Olio and Cacio e Pepe, the starchy pasta water is the binding agent that turns simple ingredients into a glossy, silky sauce. Add it gradually while tossing the pasta constantly over medium heat. You will see it come together in about two minutes.


The Parmesan Rule

Always add the Parmesan off the heat. If the pan is still too hot, the cheese will seize and clump instead of melting smoothly into the sauce. And always use freshly grated Parmesan — pre-grated cheese from a bag will never give you the same silky result.
