The Secret is the Pasta Water
Just like Aglio e Olio and Cacio e Pepe, the starchy pasta water is the binding agent that turns simple ingredients into a glossy, silky sauce. Add it gradually while tossing the pasta constantly over medium heat. You will see it come together in about two minutes.
The Parmesan Rule
Always add the Parmesan off the heat. If the pan is still too hot, the cheese will seize and clump instead of melting smoothly into the sauce. And always use freshly grated Parmesan — pre-grated cheese from a bag will never give you the same silky result.
