There is something magical about a perfectly made Shakshuka — a rich, deeply spiced tomato and red pepper sauce with eggs poached right inside it, topped with crumbled feta and fresh parsley, served straight from the cast iron skillet with thick crusty bread for dipping. One pan, thirty minutes, and one of the most satisfying brunch dishes ever made.


Building the Sauce

The sauce is everything. Take your time with the onion and pepper — cook them low and slow until they are genuinely soft and starting to caramelize. This sweetness is the foundation that balances the acidity of the tomatoes and the heat of the spices. Do not rush this step.


Watching the Eggs

This is where most people go wrong. The whites need to be fully set but the yolks should still be runny and bright orange. Cover the pan and check at 5 minutes. The difference between perfect and overcooked is about 90 seconds. When in doubt, pull them early.
