Pecan Snowball Cookies — The American Holiday Cookie That Melts Before It Reaches the Plate

Pecan Snowball Cookies are one of the great American holiday traditions. Buttery, crumbly shortbread packed with finely chopped toasted pecans, rolled into balls, baked until just set and then tumbled in powdered sugar while still warm — and again once cooled. They look like little snowballs, they smell like butter and toasted nuts, and they dissolve on the tongue in a way that makes it genuinely difficult to stop at one.


Toast the Pecans First

Raw pecans work but toasted pecans are transformative. Five minutes in a dry pan over medium heat or ten minutes in the oven at 180°C deepens the flavour dramatically, bringing out the natural oils and adding a complexity that raw nuts simply do not have. Let them cool completely before chopping and adding to the dough — warm nuts will melt the butter and affect the texture of the shortbread.


The Double Roll in Powdered Sugar

The signature snow-white coating of these cookies requires two rounds of powdered sugar. The first happens while the cookies are still warm from the oven — the heat helps the sugar adhere to the surface. The second happens once the cookies have cooled completely. The first coat melts slightly into the warm cookie; the second coat stays brilliant white and gives the finished cookie its characteristic snowy appearance. Do not skip either step.
