Sausage and Potato Bake is the kind of recipe that earns its place in any home cook's weekly rotation through sheer reliability. Smoky, well-seasoned sausage, crispy roasted potatoes and caramelised vegetables all cooked together in a single pan, with minimal prep and almost no washing up. It is hearty, satisfying and endlessly adaptable — the sort of dinner that works in every season and pleases everyone at the table.


Cut Everything the Same Size

The most important technique in a sheet pan dinner is uniformity. If the potato pieces vary wildly in size, the smaller ones will burn before the larger ones are cooked through. Cut everything — potatoes, peppers, onions — into roughly equal pieces so they cook at the same rate. Spread everything in a single layer with space between the pieces. Crowding the pan causes steaming rather than roasting, which means soft, pale vegetables instead of the crispy, caramelised edges that make this dish.


Score the Sausages

Before the sausages go into the pan, score them diagonally two or three times on each side. This does two things — it allows the fat to render out more efficiently during roasting, which bastes the surrounding vegetables, and it creates more surface area for caramelisation. Sausages scored and roasted alongside potatoes develop a deeply golden, slightly crispy exterior that whole, unscored sausages rarely achieve in the oven.
