Slow Cooker Whole Chicken — The American Crockpot Recipe That Does All the Work for You

A whole chicken in the slow cooker is one of the most useful recipes in any home cook's repertoire. Season it, set it and walk away. Eight hours later you have a bird so tender it falls off the bone at the touch of a fork, sitting in a pool of its own deeply flavoured juices. No basting, no checking, no timing anxiety. It is the definition of effortless cooking — and the results are far better than most people expect from a crockpot.


The Foil Ball Trick

A whole chicken sitting flat on the bottom of a slow cooker steams in its own juices rather than roasting, which can leave the skin pale and soft. The solution is simple — scrunch three or four balls of aluminium foil and place them on the bottom of the cooker before adding the chicken. This lifts the bird off the base, allows the heat to circulate underneath and keeps the bottom of the chicken from becoming waterlogged. It takes thirty seconds and makes a significant difference.


What to Do With the Juices

The liquid that collects in the slow cooker after the chicken is done is essentially a ready-made chicken stock, concentrated and rich with the flavour of the seasoning rub. Do not discard it. Strain it, skim the fat and use it immediately as a base for gravy, or refrigerate it and use it within three days as a soup stock. If you want crispy skin, transfer the cooked chicken to a roasting tray and place it under a hot grill for five to eight minutes straight after the slow cooker.
